2 tsp white vinegar
2 g vanilla powder, or 1 tsp vanilla bean paste

40 g egg yolks
15 g cornflour
240 g full cream milk
125 g good quality white chocolate 28%
20 g unsalted butter, melted
145 g thickened cream
15 g full cream milk powder
COCONUT MACAROONS
200 g shredded coconut
135 g sweetened condensed milk
1 egg white
pinch of salt
MANGO COULIS
2 tbsp caster sugar (adjust based on the sweetness of the mango)
1 tsp lemon juice
flesh of 1 ripe mango
