SOAKING SYRUP

1 orange
200 ml fresh orange juice
150 g caster sugar
150 ml water
1 vanilla bean, cut and scraped
100 ml rum

 

MASCARPONE CREAM

150 g mascarpone cheese
150 ml thickened cream
30 g caster sugar

 

ASSEMBLY

1 block of good-quality dark chocolate
1 orange, zested
