Glucose powder is a low sweetening powder, with medium anti freeze properties. Glucose powder gives body to a product and prevents the crystallisation of lactose. For example, it is used in sorbets for a less icy yet creamy product.

The dextrose equivalent(DE) is between 35 and 40.
